Tasty Recipe under 30 minutes

Ingredients:

Broccoli florets 1 cup
Sliced Bell Pepper 1/2
Cauliflower florets 1/2 cup
Onion cubes (small) 1
Sliced Mushroom 1/2 cup
Coconut Milk 1 can
Fresh ginger 1/2 tbsp
Tofu (thinly sliced and fried) 1/4 cup for garnish
Paprika 1/2 tsp
Salt 1 tsp
Black Pepper 1/2 tsp
Sugar 1 tbsp
Oil 3 tbsp

Recipe:

In a saucepan, add 1 tbsp oil and tofu. Fry until crisp and set it aside.

In a wok, add 2 tbsp oil, ginger and add onion, bell pepper and mushroom, stir fry for 3 minutes on medium heat.

Now add cauliflower and broccoli. Continuously stir to avoid burn or vegetables sticking to the bottom of the wok. Add salt, paprika, black pepper and sugar.  When sautéed, add coconut milk and place the lid on medium heat. Let it simmer for 7 minutes.

Remove from heat. Garnish crispy fried tofu.

Enjoy with white or brown cooked rice.
